For starters, how come you didn’t let it learn Meteor Mash? Thunderpunch has not-so-well coverage and Meteor Mash is the superior choice to do some big damage.
Ninjask
There’s not reason to max out speed. Since speed boosts already boosts it’s own speed, you should only invest a small amount in speed (preferable around 80 evs).
Rhyperior
Thunderpunch and Firepunch are both weak and won’t benifit you at all. Thunderpunch hits Gyarados for sure but Stone Edge already does the same amount of damage. Fire Punch has it’s quirks, most pokemon like Skarmory and Forretress are hit hard by Stone Edge already. Replace Thunderpunch with Stone Edge and Fire Punch with Aqua Tail (to hit those ground types like Hippowdon). EV’s should be 136 HP / 244 Atk / 128 Spe, but you can just max speed and attack if you want.
Zapdos
Nothing bad about it, although defensive versions are a waste in my opinion but don’t let that ruin yours. If it’s ok with you, then it’s ok with me. Zapdos should have Max HP, 220 defense, and 36 speed.
Lanturn
Well, it’s not bad, but Rain Dance has it’s problems because it boosts water type attacks, meaning Rhyperior shouldn’t stay in the rain at all. Other than that, it’s completely fine. I would also invest HP ev’s instead, or better yet, use a spread of 40 HP / 76 Def / 140 SpA / 252 SpD instead.
Lapras
Rest is a terrible option unless you have a aromatherapist. Otherwise, you get stuck sleeping for 2 turns, leaving you vulnerable to attacks. Use an EV spread of 192 HP / 112 Def / 160 SpA / 44 SpD.
Keep in mind that HP ev’s gives the pokemon better defensive capabilities than (special) defense EV’s. The only exception to this rule is Blissey who’s High hp means investing in it’s poor defense stat is way better than just it’s already high HP.
